The Landsmans' Bomb-Ass Tofu Recipe

Ingredients

  • 4-5 cubes hard bean curd, about 2 1/2 inches per side
  • 1 cup ground pork or beef (ground up hot Italian sausage works really well)
  • 3 tbs vegetable oil
  • 1 tbs hot bean sauce
  • 1/2 tbs minced fresh ginger
  • 1/2 tbs minced fresh garlic
  • 2 tbs soy sauce
  • 1 tbs sweet peas
  • 1 tsp hot pepper oil (or 1 tsp hot red pepper powder)
  • 1/4 cup chicken broth
  • salt to taste
  • 1/2 tbs liquid cornstarch (?)
  • 1/2 tsp black pepper
  • 1-2 tbs minced scallions
  • 1 tsp sesame oil

Marinade

  • 2 tbs white wine
  • pinch cornstarch

Preparation

  1. Cut the bean curd into 1/2-inch cubes
  2. Mix the ground meat with marinade and let stand for 5 minutes
  3. Heat a wok over highest heat for 1 minute; then add vegetable oil. As soon as the oil is smoking hot, add the ground meat and stir-fry for about 15 seconds
  4. Add bean curd cubes, hot bean sauce, ginger, garlic, soy sauce, sweet peas, and hot pepper oil, and stir-fry lightly for 10 more seconds
  5. Add chicken broth and salt and stir over high heat until mixture comes to a boil
  6. Thicken the sauce with liquid cornstarch
  7. Garnish with black pepper, scallions, and sesame oil. Serve hot. The hotter (both temperature and pepper hot), the better. This dish is extremely delicious when mixed with steamed white rice.

Note from Nick: The original recipe was a bit vague as to what constituted the "marinade", so I screwed up and just tossed everything but the tofu together. I don't have a wok, so I used a cast iron pan, and just threw the meat stuff in first, then popped the tofu in once the meat seemed cooked. There were no serious injuries, and everything came out fine.
